Methi Microgreens Omelette
Ingredients:
2 eggs
1/4 cup methi microgreens, chopped
Salt and pepper to taste
1 tablespoon butter or oil
Instructions:
In a bowl, whisk together the eggs, chopped methi microgreens, salt, and pepper.
Heat the butter or oil in a non-stick skillet over medium heat.
Pour the egg mixture into the skillet and cook until the edges begin to set, about 2-3 minutes.
Using a spatula, gently lift the edges of the omelette and tilt the skillet to allow the uncooked egg to flow to the edges.
Once the omelette is mostly set, flip it over and cook for another 1-2 minutes, or until cooked through.
Serve the methi microgreens omelette hot with toast or your favorite breakfast sides.
