Methi Microgreens Pesto
Ingredients:
1 cup methi microgreens
1/4 cup nuts (such as pine nuts, walnuts, or almonds)
1/4 cup grated Parmesan cheese
2 cloves garlic
1/4 cup olive oil
Salt and pepper to taste
Instructions:
In a food processor, combine the methi microgreens, nuts, Parmesan cheese, and garlic.
Pulse until coarsely chopped.
With the food processor running, slowly add the olive oil until the pesto reaches your desired consistency.
Season with salt and pepper to taste.
Serve the methi microgreens pesto tossed with pasta, spread on sandwiches, or as a dip for vegetables.
